For the sherbet;

1-3 handfuls of basil, a little sugar (you can add honey later if you want), juice of 1-2 lemons, 1-2 cinnamon sticks, 4-5 cloves, add a jug of boiling water, let it brew for 15-20 minutes, strain, cool
