Honey freezes due to weather conditions during the winter. Freezing and crystallization are natural. This is a normal occurrence. If the honey doesn't freeze, it means its natural process has been interfered with.
You can thaw it in a bain-marie. Thawing it once is enough; it will not freeze anymore.
